once I connect m5stack to the pc via wifi, which functions/libraries I have to include if I want, for example, send the data of IMU via wi fi and not using serial port?

@giulio what programming environment and operating system are you using.
UIFlow, so easy an adult can learn it!
If I don't know it, be patient!
I've ether not learned it or am too drunk to remember it!

You need to have pc-end software to decode what m5stack sends
